The recipe yields a batch of twenty burritos filled with a hearty mixture of sausage, scrambled eggs, potatoes and cheese, all wrapped in soft tortillas.

Easy Breakfast Burritos

Ingredients

  • 12 eggs
  • 1 (4 ounce) can chopped green chilies, drained
  • 2 lbs bulk sausage (I use Farmland Pork & Bacon Sausage)
  • 1 lb frozen diced potatoes
  • cheddar cheese, shredded
  • 20 tortillas

Method

  1. Cook the sausage and the frozen potatoes separately in pans until fully browned and cooked.
  2. Whisk the eggs with the drained green chillies and scramble them in a pan until set.
  3. Combine the cooked potatoes, scrambled eggs and sausage together in a large mixing bowl.
  4. Spoon one to two portions of the filling onto each tortilla and sprinkle shredded cheddar cheese on top.
  5. Fold each tortilla to enclose the filling, then wrap and place the burritos in the freezer.
  6. To eat, heat a frozen burrito in the microwave for 1-2 minutes until warmed completely.
