Easy Breakfast Burritos
Prepare these convenient breakfast burritos in advance and store them in the freezer for a speedy morning meal. They are ideal for a fast breakfast before work or school, requiring just a short time in the microwave to heat through. The recipe yields a batch of twenty burritos filled with a hearty mixture of sausage, scrambled eggs, potatoes and cheese, all wrapped in soft tortillas.
Ingredients
- 12 eggs
- 1 (4 ounce) can chopped green chilies, drained
- 2 lbs bulk sausage (I use Farmland Pork & Bacon Sausage)
- 1 lb frozen diced potatoes
- cheddar cheese, shredded
- 20 tortillas
Method
- Cook the sausage and the frozen potatoes separately in pans until fully browned and cooked.
- Whisk the eggs with the drained green chillies and scramble them in a pan until set.
- Combine the cooked potatoes, scrambled eggs and sausage together in a large mixing bowl.
- Spoon one to two portions of the filling onto each tortilla and sprinkle shredded cheddar cheese on top.
- Fold each tortilla to enclose the filling, then wrap and place the burritos in the freezer.
- To eat, heat a frozen burrito in the microwave for 1-2 minutes until warmed completely.
