This straightforward recipe yields classic Russian blini, delicate pancakes similar to crepes. The batter comes together quickly from pantry staples like flour, milk, egg, and butter. Cooked in a skillet, they are ready in minutes. Traditionally served as an appetiser, these versatile pancakes pair wonderfully with savoury toppings like caviar or lox, or with something sweet. You can expect to make about 20 blini from this batch.

Easy Blini (Russian Pancake)

Ingredients

  • 1 cup all-purpose flour
  • 0.75 teaspoon salt
  • 0.5 teaspoon baking powder
  • 0.75 cup milk
  • 2 tablespoons milk
  • 1 large egg
  • 1 tablespoon melted unsalted butter
  • 1 tablespoon unsalted butter

Method

  1. Assemble all your ingredients.
  2. In a mixing bowl, stir together the flour, salt, and baking powder.
  3. In another bowl, whisk the 3/4 cup plus 2 tablespoons milk with the egg and 1 tablespoon of melted butter. Pour this mixture into the dry ingredients and stir until you have a smooth, combined batter.
  4. Melt 1 tablespoon of butter in a large skillet. For each blini, drop one tablespoon of batter onto the hot skillet, cooking several at once.
  5. Fry until bubbles appear on the surface, which should take 1 1/2 to 2 minutes. Turn them over and cook for about 1 minute more until browned. Transfer the cooked blini to a plate lined with paper towels.
  6. Continue the process until all the batter is used.
