Almost Fat Free Cornbread
This cornbread recipe offers a lighter alternative without sacrificing flavour. Created from a Weight Watchers cookbook, it avoids the dense texture common in fat-free baking. Using simple ingredients like cornmeal, flour, and skim milk, it yields a satisfying bread that's ideal for serving alongside meals. It makes 12 portions and is ready in roughly half an hour.
Ingredients
- 1 cup cornmeal
- 1 cup flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cups skim milk
- 2 large egg whites, lightly beaten
Method
- Set your oven to 400 degrees. Coat an 8x8 or 9x9 inch baking pan with cooking spray and put it to one side.
- Combine the cornmeal, flour, baking powder, and salt together in a mixing bowl.
- Stir in the skim milk and the lightly beaten egg whites, mixing only until everything is incorporated.
- Transfer the batter to the prepared pan and bake for 20 minutes, or until a toothpick inserted into the centre comes out clean.
