Dutch Babies
This is a favourite family breakfast, known for its impressive puff in the oven. The recipe originates from a Klutz cookbook and requires only butter, eggs, milk, and flour. It bakes quickly for a dramatic and tasty result, perfect for a special morning treat. The finished dish is traditionally served with a dusting of icing sugar and a squeeze of lemon or simply with maple syrup.
Ingredients
- 2 ounces butter
- 4 eggs
- 1 cup milk
- 1 cup flour
Method
- Preheat the oven to 425.
- Divide the butter and place one piece into each of two 8-inch round cake pans. Place them in the oven to melt, watching carefully, and remove once melted.
- In a blender, combine the eggs and milk, then gradually blend in the flour.
- Pour an equal amount of the batter into each prepared pan.
- Bake for 15 minutes until the Dutch babies are very puffed, firm, and have golden brown edges.
- To serve, sprinkle with powdered sugar and squeeze half a lemon over each one, or use maple syrup.
