Dr. Pepper BBQ Sauce
This homemade barbecue sauce gets its distinctive flavour from Dr. Pepper, which melds with ketchup, brown sugar, and aromatic spices. The process involves sautéing onions and garlic before simmering all ingredients into a thick, glossy condiment. Once blended, it becomes a versatile sauce for brushing on meats or serving on the side. It yields one saucepan full and requires about 70 minutes to prepare.
Ingredients
- 4 tablespoons unsalted butter (1/2 stick)
- 1 large yellow onion (chopped)
- 4 cloves garlic, chopped
- 1 cup ketchup
- 3 tablespoons tomato paste
- 12 ounces dr. pepper
- 1/2 cup cider vinegar
- 1/3 cup Worcestershire sauce
- 1/2 cup dark brown sugar (Packed)
- 2 teaspoons new Mexican chili powder (or Ancho)
- 1 teaspoon white pepper (fine-ground)
- 1 teaspoon kosher salt
Method
- Melt the butter in a heavy saucepan. Cook the chopped onion and garlic until they turn translucent, which should take roughly 10 minutes.
- Pour in all the other ingredients and bring to a simmer. Let this cook for about 15 minutes so the flavours can combine.
- Carry on cooking the mixture for a further 20 to 30 minutes, until it starts to thicken properly. Taste it and add more salt or pepper if you think it needs it, bearing in mind the ribs may already be seasoned.
- Allow the sauce to cool for approximately 10 minutes, or until it is warm but not hot. Use an immersion blender or a standard blender to puree it, which will help thicken the texture. Let it cool completely.
- You can brush this sauce onto your food during the last 5 to 15 minutes of cooking. Any extra can be served separately.
