Dr Pepper Baked Beans
This hearty baked bean casserole combines pinto beans with sliced kielbasa sausage, all simmered in a savoury sauce made with Dr Pepper, ketchup, and seasonings. The mixture is baked under a golden topping of grated cheddar and breadcrumbs until bubbling and delicious. It yields a generous portion ideal for gatherings.
Ingredients
- 2 lbs kielbasa, cut into 1/4 inch rounds (or your favorite sausage)
- 1 3/4 cups Dr. Pepper cola, divided
- 4 (15 ounce) cans pinto beans, drained
- 1 (15 ounce) bottle of good-quality ketchup (I use Heinz)
- 1/4 cup red wine vinegar
- 1 tablespoon Worcestershire sauce
- 1 dash Tabasco sauce
- 2 tablespoons soy sauce
- 1/2 teaspoon dry mustard
- 1 small onion
- 1 tablespoon fresh minced garlic (or to taste)
- 1 teaspoon seasoning salt
- 1 teaspoon black pepper (or to taste)
- 1/2 lb cheddar cheese, grated
- 1/2 cup breadcrumbs
Method
- Preheat your oven to 375 degrees.
- Prepare a 3-qt baking dish by buttering it.
- Place a skillet on the heat with 1 tbsp of oil.
- Put the sausage rounds and 3/4 cup of Dr Pepper into the skillet and bring to a boil.
- Cover the skillet and reduce the heat.
- Cook for about 30 mins until the liquid reduces to a syrupy consistency.
- In a large saucepan, combine the drained pinto beans with 1 cup of Dr Pepper, ketchup, red wine vinegar, Worcestershire sauce, Tabasco sauce, soy sauce, garlic, onion, and seasoning salt.
- Bring this bean mixture to a simmer, giving it an occasional stir.
- Add black pepper to taste.
- Transfer the bean mixture into the prepared buttered baking dish.
- Mix the cooked sausage and its syrup into the beans.
- Sprinkle the grated cheese and breadcrumbs evenly over the top.
- Cover the dish and bake for 40 mins, or until the cheese has melted and the contents are bubbling.
