Desi Corn
This Desi Corn recipe transforms simple corn on the cob with Indian-inspired flavours. The corn is first boiled until nearly cooked, then coated in a mixture of melted butter, salt, and cayenne pepper. It is wrapped in foil and baked or grilled for about 5 minutes. Finally, it is unwrapped, brushed with lime juice, sprinkled with paprika, and grilled again until the kernels turn a lovely golden colour. A quick and tasty vegetable side dish.
Ingredients
- 8 corn on the cob, husked
- 1/2 cup melted butter
- salt
- 1/2 teaspoon cayenne pepper
- lime juice
Method
- Boil the corn until it is almost cooked.
- Combine the melted butter and salt in a bowl.
- Cover the corn evenly with the butter mixture.
- Wrap each cob in foil and bake or grill for about 5 minutes.
- Unwrap the corn, brush it with lime juice, sprinkle paprika on top, and grill without the foil for a few min until the kernels start to turn a golden colour.
