Delicious Homemade Egg Noodles
This cherished family recipe for fresh egg noodles has been passed down through generations. The process involves making a smooth dough, rolling it out thinly, cutting it into strips, and allowing them to dry before cooking. Ingredients
- 2 cups flour
- 3 egg yolks
- 1 egg
- 2 teaspoons salt
- 1/4-1/2 cup water
Method
- Place the flour in a bowl, creating a well in the middle. Add the egg yolks, whole egg and salt into this well.
- Use your hands to work the egg mixture completely into the flour.
- Incorporate the water gradually, adding just one tablespoon at a time and mixing well after each addition.
- Add only the amount of water required to bring the mixture together into a cohesive ball of dough.
- Transfer the dough ball onto a surface generously dusted with flour. Knead it for about 10 minutes until it becomes smooth and elastic.
- Cover the dough and allow it to rest for 10 minutes.
- Separate the rested dough into four equal portions.
- Working with one portion at a time and keeping the rest covered, roll the dough out into a very thin, paper-like rectangle.
- Carefully roll the thin rectangle of dough around your rolling pin, then slide the pin out from the centre.
- Slice the rolled dough crosswise to create strips, cutting them 1/8-inch wide for narrow noodles or 1/4-inch for wider ones.
- Separate the strips and lay them out on a clean towel to dry for about 2 hours.
- Once the noodle strips are completely dry, break them into smaller, more manageable pieces.
- Cook the noodles in 3 quarts of rapidly boiling salted water (or chicken broth with 1 tablespoon salt) for 12 to 15 minutes, until they are tender.
- Remove the cooked noodles from the heat and drain them well.
