Delicious Egg Salad
This classic American salad is wonderfully creamy and simple to prepare. Hard-boiled eggs are combined with mayonnaise, chopped green onion and a touch of yellow mustard, then seasoned with paprika, salt and pepper. The result is a flavourful and satisfying mixture that is ideal for sandwiches, serving with crackers or over a bed of fresh salad greens. It makes a perfect quick lunch or light meal for four people.
Ingredients
- 8 eggs
- 0.5 cup mayonnaise
- 0.25 cup chopped green onion
- 1 teaspoon prepared yellow mustard
- 0.25 teaspoon paprika
- salt and pepper to taste
Method
- Assemble all of your required ingredients.
- Put the eggs into a saucepan and add enough cold water to cover them. Heat until the water boils, then take the pan off the heat. Put the lid on and allow the eggs to sit in the hot water for 10 to 12 minutes.
- Take the eggs out of the hot water. Let them cool down, then peel and chop them.
- Transfer the chopped eggs to a mixing bowl. Add the mayonnaise, green onion and mustard, mixing them in. Flavour with paprika, salt and pepper.
- Mix everything together thoroughly. Enjoy the salad on bread, with crackers or atop salad leaves.
