Deep-dish Veggie Pizza
This deep-dish pizza offers a satisfying vegetarian meal with layers of flavour. A pre-baked crust holds a savoury mix of sautéed spinach, onions, and garlic, followed by a herbed ricotta cheese layer. Sliced tomatoes and a blend of pizza cheeses complete the filling before a second dough layer is added. After baking until golden, it's finished with more cheese and allowed to rest before serving. The recipe yields eight portions.
Ingredients
- 2 (13 7/8 ounce) packages prepared pizza crust
- 1 1/2 cups sliced red onions
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1 (10 ounce) package frozen chopped spinach, thawed and well-drained
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup ricotta cheese
- 1 1/4 cups shredded pizza cheese (4-cheese blend)
- 2 tablespoons snipped fresh flat-leaf parsley
- 1/4 teaspoon crushed red pepper flakes
- 4 roma tomatoes, thinly sliced
Method
- Heat your oven to 425°F.
- Use nonstick spray to lightly grease a 12-inch heavy ovenproof pan or cast iron skillet.
- Take one package of pizza dough and unroll it, then shape it into a circle.
- Fit the dough into the greased skillet, pressing it over the base and partially up the sides.
- Bake this for 5 minutes, then take it out of the oven.
- Cook the sliced red onions and minced garlic in 2 tablespoons of olive oil in a large skillet for about 5 minutes until tender.
- Stir in the thawed spinach, 1/4 teaspoon salt, and 1/4 teaspoon pepper.
- Continue to cook and stir until the spinach is hot.
- Take the skillet off the heat and set the mixture aside.
- Mix the ricotta cheese with 1/4 cup of the pizza cheese, the parsley, 1/4 teaspoon salt, and the red pepper flakes in a small bowl.
- Evenly distribute the cooked spinach mixture across the base of the part-baked crust.
- Spread the prepared ricotta mixture over the spinach layer.
- Arrange the thinly sliced Roma tomatoes on top and drizzle them with 1 tablespoon of olive oil.
- Scatter 3/4 cup of the pizza cheese over the tomatoes.
- Unroll the second package of pizza dough and form it into a circle measuring 12 to 13 inches.
- Lay this dough circle over the assembled layers in the skillet.
- Brush the top of the dough with the last of the olive oil.
- Bake for 15 to 20 minutes or until the top crust turns a golden colour.
- Sprinkle the remaining pizza cheese over the top.
- Return it to the oven for 2 to 3 minutes to melt the cheese.
- Allow the pizza to stand for 10 minutes before you slice it.
