Curried Samosa Shepherd Pie
This inventive pie brings together the classic elements of a samosa in the comforting form of a shepherd's pie. A curry-spiced filling of ground beef and peas is nestled in a pastry shell, then crowned with a fluffy layer of garlic mashed potatoes. The whole dish is baked until golden and bubbling, creating a satisfying meal that serves six. It requires just five key ingredients and takes under an hour to prepare.
Ingredients
- 2 1/2 cups Simply Potatoes Garlic Mashed Potatoes
- 1 single refrigerated pie crust
- 8 ounces frozen peas
- 1 lb 90% lean ground beef
- 1 teaspoon curry powder
Method
- Heat your oven to 350 degrees.
- Fit the refrigerated pie crust into a 9-inch glass pie dish, pressing it into the base and up the sides. Leave it to one side.
- In a nonstick skillet, cook the ground beef, breaking it into small pieces as it browns. This should take 6-8 minutes. Mix in the curry powder and frozen peas, then continue cooking for another 3 minutes.
- Transfer the cooked beef and pea mixture into the prepared pie shell.
- Put the mashed potatoes into a large bowl. Use a fork to break them up and stir until they become light and fluffy. Spoon this potato mixture over the meat filling, spreading it evenly to cover.
- Bake the pie in the oven for 35-40 minutes.
