This colourful salad celebrates classic Greek ingredients. It combines toasted ciabatta croutons with roughly chopped tomatoes and cucumber, salty black olives, and crumbled feta cheese. Fresh basil is scattered over before everything is dressed with a simple mix of balsamic vinegar and olive oil. It's a bright, textural dish ideal for a quick and satisfying lunch.

Crunchy Feta and Tomato Salad

Ingredients

  • 1/2 small ciabatta loaf
  • 2 tbsp olive oil
  • 4 tomatoes roughly chopped
  • 1/2 cucumber roughly chopped
  • handful pitted black olives
  • 100g feta cheese
  • handful fresh basil leaves
  • splash balsamic vinegar

Method

  1. Set your grill to high. Slice the ciabatta loaf into bite-size chunks and arrange them in one layer on a baking tray. Drizzle with 1 tbsp of the olive oil. Place under the grill for 3-4 mins, giving the bread pieces a turn now and then, until they are lightly golden. Set aside to cool.
  2. Transfer the cooled ciabatta croutons to a large bowl. Add the chopped tomatoes, cucumber, olives and feta cheese. Tear the basil leaves and sprinkle them over the salad. Whisk together the balsamic vinegar and the remaining 1 tbsp of olive oil, then pour this dressing over the salad. Toss everything together lightly to coat.
