Crock Pot Posole
This straightforward version of posole is ideal for busy schedules. You can assemble the ingredients the night before, then simply start the slow cooker in the morning. The stew features cubed pork ribs, white hominy, tomatoes and green chillies, all simmered together with aromatic seasonings. It yields a comforting meal for six, ready after 5 to 6 hours of gentle cooking. Serve it warm with your choice of tortillas.
Ingredients
- 1 -1 1/2 lb country-style pork ribs, boneless
- 1 medium onion, chopped
- 1 (29 ounce) can white hominy, drained (Posole)
- 1 (14 1/2 ounce) can diced tomatoes
- 2 -3 cups chicken stock
- 2 garlic cloves, minced
- 1 (4 ounce) can chopped green chili peppers
- 1 teaspoon salt
- 1/2 teaspoon thyme
- 1/4 teaspoon cumin
Method
- Cut the pork ribs into cubes and brown them in a skillet with a little oil. Place the chopped onion in the skillet and cook until softened. Remove any excess fat.
- Transfer the pork and onion mixture into the crock pot. Add all the other listed ingredients and stir to combine.
- Set the crock pot to low heat and allow the stew to cook for 5 hours to 6 hours.
