These quick and budget-friendly tortilla sandwiches are an ideal speedy meal. Grated cheddar is melted between wholemeal tortillas until crisp, then topped with chunky avocado, fresh cherry tomatoes and finely chopped red chilli. Finished with coriander leaves and a squeeze of lime, they are best enjoyed immediately while still hot and crunchy. Perfect for a simple lunch or dinner.

Crispy Cheese and Guacamole Tortillas

Ingredients

  • 50g mature cheddar grated
  • 4 wholemeal tortillas
  • 1 avocado
  • about 16 cherry tomatoes halved or quartered
  • 1 red chilli deseeded and finely chopped
  • handful coriander leaves
  • 1 lime cut into wedges

Method

  1. Set your oven to 220C/200C fan/gas 7. Distribute the grated cheese across the tortillas, then press them together in pairs to create two sandwiches. Place them on baking sheets and cook for 8-10 mins until they turn golden and crisp with melted cheese.
  2. Cut the avocado in half and scoop chunks onto the two baked tortillas, pressing them in slightly. Top with the tomatoes, chopped chilli and coriander leaves, then season. Finish with a squeeze of lime juice and serve straight away.
