This lighter peanut chicken curry balances the spiciness of red curry paste with the sweetness of peanut butter. It uses light coconut milk and is ready in about 25 minutes. Creamy Peanut Chicken

Ingredients

  • 1 tablespoon peanut oil
  • 1 tablespoon red curry paste
  • 1 teaspoon sambal oelek or 1 teaspoon other chili sauce
  • 1 lb chicken breast (cut into small cubes or strips)
  • 1 cup light coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 3 tablespoons crunchy peanut butter
  • 1 lemon, cut into wedges, to serve (optional)

Method

  1. Warm the peanut oil in a wok.
  2. Fry the red curry paste and sambal oelek for one minute.
  3. Place the chicken pieces in the wok and stir fry for around 4 minutes until golden.
  4. Pour in the light coconut milk, fish sauce, brown sugar, and crunchy peanut butter. Bring to a boil, then let it simmer for around 8-10 minutes until the sauce thickens slightly.
  5. Serve the chicken over rice, accompanied by lemon wedges and roti bread.
  6. You can add vegetables like green beans to the recipe by including them at step 4 and letting them simmer.
