Creamy Pasta with Imitation Crab

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 6 cloves garlic, minced
  • 1 pound imitation crabmeat, diced
  • 1 (16 ounce) package rotini pasta
  • 1 cup half-and-half
  • 0.5 cup chopped fresh parsley
  • 0.33333334326744 cup grated Parmesan cheese

Method

  1. Place a large pot of lightly salted water on to boil.
  2. Meanwhile, warm the oil in a large saucepan. Cook the diced onion and minced garlic, stirring, for about 5 minutes until translucent. Add the diced imitation crab and cook for 2 minutes.
  3. Once the water is boiling, add the rotini pasta. Cook for about 8 minutes, stirring now and then, until it is al dente.
  4. While the pasta cooks, pour the half-and-half and add the chopped parsley to the crab mixture. Stir and allow it to reach a simmer. Keep the sauce simmering, thinning it with pasta water if needed, until the pasta is done.
  5. Drain the cooked pasta.
