Creamy Pasta with Imitation Crab
This American dinner dish combines pasta with imitation crab in a rich, garlic-infused sauce. The creamy base is made with half-and-half and finished with Parmesan cheese and fresh parsley. Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 6 cloves garlic, minced
- 1 pound imitation crabmeat, diced
- 1 (16 ounce) package rotini pasta
- 1 cup half-and-half
- 0.5 cup chopped fresh parsley
- 0.33333334326744 cup grated Parmesan cheese
Method
- Place a large pot of lightly salted water on to boil.
- Meanwhile, warm the oil in a large saucepan. Cook the diced onion and minced garlic, stirring, for about 5 minutes until translucent. Add the diced imitation crab and cook for 2 minutes.
- Once the water is boiling, add the rotini pasta. Cook for about 8 minutes, stirring now and then, until it is al dente.
- While the pasta cooks, pour the half-and-half and add the chopped parsley to the crab mixture. Stir and allow it to reach a simmer. Keep the sauce simmering, thinning it with pasta water if needed, until the pasta is done.
- Drain the cooked pasta.
- Stir the grated Parmesan cheese into the crab sauce and warm it for about 2 minutes until the cheese melts. Spoon the finished sauce over the drained pasta to serve.
