This traditional American potato salad brings together cubed red potatoes and chopped hard-boiled eggs. Creamy Carolina Potato Salad

Ingredients

  • 2 pounds red potatoes
  • 3 hard-cooked eggs, chopped
  • 0.5 cup sour cream
  • 0.5 cup mayonnaise
  • 0.5 (4 ounce) jar chopped pimento peppers
  • 2 green onions, chopped
  • 2 slices cooked bacon, chopped
  • 2 tablespoons yellow mustard
  • 1 tablespoon white sugar
  • 1 tablespoon red wine vinegar
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon celery seed
  • 0.25 teaspoon garlic powder
  • 1 pinch paprika, or as desired

Method

  1. Put the potatoes into a large pot and cover them with salted water, then bring to a boil. Lower the heat to medium-low and let them simmer until they are tender, which will take 20 to 25 minutes. After draining, allow them to cool before chopping into 1-inch cubes.
  2. Mix the potatoes and eggs together in a large bowl and set this aside. In a separate bowl, stir together the sour cream, mayonnaise, pimentos, green onions, bacon, mustard, sugar, vinegar, salt, black pepper, celery seeds and garlic powder. Pour this dressing over the potato and egg mixture and toss everything gently until well coated. Finish by sprinkling paprika over the top.
