Cream Cheese Rolls
These soft, sweet rolls feature a rich dough made with sour cream and yeast, which is chilled overnight for easy handling. Each portion is rolled out, spread with a creamy vanilla and cream cheese filling, then sliced and baked. The warm rolls are finished with a simple vanilla glaze. The recipe makes four dozen rolls, perfect for sharing. The total preparation and rising time is approximately 560 minutes.
Ingredients
- 1 (8 ounce) carton sour cream
- 1/2 cup sugar
- 1/2 cup butter
- 1 teaspoon salt
- 2 packages dry yeast
- 1/2 cup warm water
- 2 large eggs, lightly beaten
- 4 -5 cups flour
- 2 (8 ounce) packages cream cheese, softened
- 3/4 cup sugar
- 2 teaspoons vanilla
- 1/8 teaspoon salt
- 1 large egg
- 2 cups sifted icing sugar
- 1/4 cup milk
- 2 teaspoons vanilla
Method
- Place the sour cream, sugar, butter and salt into a saucepan.
- Heat the mixture until the butter has melted, giving it an occasional stir.
- Allow it to cool down to between 105*F and 115*F.
- In a large bowl, dissolve the dry yeast in the warm water.
- Leave it to stand for 5 minutes.
- Mix in the cooled sour cream mixture and the lightly beaten eggs.
- Slowly add sufficient flour to create a soft dough.
- The dough will remain sticky.
- Cover the bowl tightly and refrigerate the dough for 8 hours.
- Separate the chilled dough into 4 equal parts.
- Take one portion, place it on a floured surface and knead it 4 or 5 times.
- Roll this portion into a rectangle measuring 12 by 8 inches.
- Spread a quarter of the prepared filling over the dough, keeping a 1/2 inch border clear.
- Roll the dough up tightly from the long side, like a jellyroll.
- Press the seam firmly to seal it closed.
- Slice the roll into 1 inch pieces and place them 2 inches apart on a greased baking sheet.
- Follow the same process with the rest of the dough and filling.
- Cover the rolls and let them rise in a warm, draft-free spot for 45 minutes to 1 hour, until doubled.
- Bake at 375*F for 15 to 20 minutes, or until they turn a light golden brown.
- Transfer the baked rolls to wire racks and drizzle the glaze over them while they are still warm.
- To make the filling, put all filling ingredients into a large bowl and beat on high speed until fully combined.
- For the glaze, mix all glaze ingredients together in a bowl, stirring until the mixture is smooth.
