Cream Cheese Rolls

Ingredients

  • 1 (8 ounce) carton sour cream
  • 1/2 cup sugar
  • 1/2 cup butter
  • 1 teaspoon salt
  • 2 packages dry yeast
  • 1/2 cup warm water
  • 2 large eggs, lightly beaten
  • 4 -5 cups flour
  • 2 (8 ounce) packages cream cheese, softened
  • 3/4 cup sugar
  • 2 teaspoons vanilla
  • 1/8 teaspoon salt
  • 1 large egg
  • 2 cups sifted icing sugar
  • 1/4 cup milk
  • 2 teaspoons vanilla

Method

  1. Place the sour cream, sugar, butter and salt into a saucepan.
  2. Heat the mixture until the butter has melted, giving it an occasional stir.
  3. Allow it to cool down to between 105*F and 115*F.
  4. In a large bowl, dissolve the dry yeast in the warm water.
  5. Leave it to stand for 5 minutes.
  6. Mix in the cooled sour cream mixture and the lightly beaten eggs.
  7. Slowly add sufficient flour to create a soft dough.
  8. The dough will remain sticky.
  9. Cover the bowl tightly and refrigerate the dough for 8 hours.
  10. Separate the chilled dough into 4 equal parts.
  11. Take one portion, place it on a floured surface and knead it 4 or 5 times.
  12. Roll this portion into a rectangle measuring 12 by 8 inches.
  13. Spread a quarter of the prepared filling over the dough, keeping a 1/2 inch border clear.
  14. Roll the dough up tightly from the long side, like a jellyroll.
  15. Press the seam firmly to seal it closed.
  16. Slice the roll into 1 inch pieces and place them 2 inches apart on a greased baking sheet.
  17. Follow the same process with the rest of the dough and filling.
  18. Cover the rolls and let them rise in a warm, draft-free spot for 45 minutes to 1 hour, until doubled.
  19. Bake at 375*F for 15 to 20 minutes, or until they turn a light golden brown.
  20. Transfer the baked rolls to wire racks and drizzle the glaze over them while they are still warm.
  21. To make the filling, put all filling ingredients into a large bowl and beat on high speed until fully combined.
  22. For the glaze, mix all glaze ingredients together in a bowl, stirring until the mixture is smooth.
