Cream Cheese Kolacky
These kolacky are delightful Eastern European pastries made with a simple dough of cream cheese, butter, and flour. After chilling, the dough is rolled, cut into squares, and filled with a spoonful of your favourite fruit jam. The corners are folded and sealed before baking until golden. A final dusting of confectioners' sugar adds a sweet finish. This recipe yields 30 pieces, ideal for sharing as a snack or dessert.
Ingredients
- 3 ounces cream cheese
- 0.5 cup butter, softened
- 1 cup all-purpose flour
- 0.5 cup any flavor fruit jam
- 0.33333334326744 cup confectioners' sugar for decoration
Method
- Collect all the required ingredients.
- In a bowl, blend the cream cheese and butter until the mixture is creamy.
- Slowly mix in the flour until incorporated, then form the dough into a ball. Cover the bowl and place it in the refrigerator for at least 3 hours or overnight.
- Heat your oven to 350 degrees F (180 degrees C).
- On a floured surface, roll the dough to a 1/8 inch thickness. Cut it into 2 ½-inch squares and place roughly 1/2 teaspoon of jam in the middle of each.
- Fold opposite corners over the filling and press them together to close. Arrange the pastries on baking sheets that do not need greasing.
- Bake in the heated oven for about 10 to 12 minutes until they turn a light golden colour. Let them cool on wire racks, then sprinkle lightly with confectioners sugar.
