Cranberry Spinach Salad
This colourful salad is ideal for feeding a group at a potluck or gathering. It combines fresh spinach with sweet dried cranberries and crunchy toasted almonds. A homemade dressing with white wine vinegar, cider vinegar, and a hint of paprika brings it all together. For the best texture, mix the dressing with the salad ingredients immediately before you plan to serve it, as it does not keep well once dressed.
Ingredients
- 1 lb spinach
- 1 cup dried cranberries (I use one bag of Craisins)
- 1 tablespoon butter
- 3/4 cup almonds, blanched and slivered
- 2 tablespoons toasted sesame seeds
- 1 tablespoon poppy seed
- 2 teaspoons minced onions
- 1/4 teaspoon paprika
- 1/2 cup sugar
- 1/4 cup white wine vinegar
- 1/4 cup cider vinegar
- 1/2 cup vegetable oil
Method
- Melt 1 tablespoon butter in a saute pan, add 3/4 cup almonds and stir until they are lightly toasted, then set them aside to cool.
- Toast 2 tablespoons of sesame seeds in the same pan, then set them aside to cool as well.
- Combine the 1 lb of spinach, 1 cup of dried cranberries, and the cooled almonds and sesame seeds in a large bowl.
- Whisk together the dressing ingredients, including 1/2 cup sugar, 1/4 cup white wine vinegar, 1/4 cup cider vinegar, 1/2 cup vegetable oil, 2 teaspoons minced onions, 1 tablespoon poppy seed, and 1/4 teaspoon paprika, then toss with the salad just before serving.
