Cranberry & Champagne Sauce
This British condiment offers a festive twist on a classic. Fresh cranberries are cooked in a light caramel before being simmered into a thick, jammy consistency. - 200g golden caster sugar
- 450g fresh or frozen cranberry
- splash champagne or sparkling white wine
Method
- Place the sugar into a medium saucepan and heat it. Allow the sugar to dissolve and form a light-brown, bubbling caramel without stirring.
- Add the cranberries to the caramel and cook, stirring, until they begin to burst. Let the mixture simmer for about 10 mins until it becomes a thick, jammy sauce.
- Add the Champagne or wine, bring the sauce to the boil, then take it off the heat. Transfer it to a bowl to cool completely.
