Crab Salsa Crostini
These sophisticated French canapés feature a fresh crab salsa with cherry tomatoes and red onion, brightened with lime and coriander. The mixture is spooned onto crisp, golden crostini made from thinly sliced baguette. Ideal for entertaining, both components can be prepared ahead, making assembly simple for any celebration. Ingredients
- 250g pot fresh crab meat
- 85g cherry tomato quartered
- 1 small red onion finely chopped
- zest and juice 1 lime
- 2 tbsp olive oil
- bunch coriander chopped
- 4 thin baguettes
- splash of olive oil
Method
- Combine the crab meat, tomatoes and red onion in a bowl. This mixture can be refrigerated for up to 2 days. When ready to serve, stir through the lime zest, juice and chopped coriander, then spoon onto the prepared crostini bases.
- To make the crostini, slice each of the 4 baguettes into 20 pieces, each ½cm thick, and discard the ends. Lightly drizzle with olive oil and grill. Toast for 2-3 mins until pale gold, then flip and cook for another 1-2 mins until entirely crisp and golden. Work in batches and keep the toasts in an airtight container at room temperature for up to 3 days.
