This dish offers a fresh spin on a classic Italian favourite by replacing traditional pasta with spiralised courgettes. A rich, slow-cooked bolognese sauce is prepared using turkey mince, vegetables, and chopped tomatoes, simmered for about 1 hr to develop deep flavour. The courgetti is quickly cooked just before serving. Finished with grated cheese and fresh basil, it's a wholesome option for lunch or dinner, serving four people.

Courgetti Bolognese

Ingredients

  • 2 tbsp olive oil
  • 500g turkey mince (thigh or breast)
  • 1 large onion finely chopped
  • 1 garlic clove crushed
  • 2 large carrots peeled and diced
  • 150g pack button mushrooms roughly chopped
  • 1 tbsp tomato purée
  • 2 x 400g cans chopped tomatoes
  • 2 chicken stock cubes
  • 1 tbsp soy sauce
  • 4 large courgettes
  • grated pecorino or parmesan to serve
  • handful basil leaves

Method

  1. Warm 1 tbsp of the olive oil in a large saucepan. Cook the turkey mince until it browns, then transfer it to a bowl and set it aside.
  2. Place the onion in the same pan and cook it gently for 8-10 mins until soft. Add the garlic and stir for 1 min, then mix in the carrot and mushrooms, cooking for about 3 mins until they soften. Return the turkey to the pan, add the tomato purée, stir briefly, and pour in the chopped tomatoes. Fill one empty tomato can with water and add it to the pan. Crumble in the chicken stock cubes and bring the mixture to the boil. Reduce the heat and let it simmer for about 1 hr until the sauce thickens and the vegetables are tender.
  3. As the bolognese finishes cooking, stir in the soy sauce and season to taste. Spiralise the courgettes using a large noodle blade. Heat the remaining 1 tbsp olive oil in a large frying pan and cook the courgetti for 2-3 mins until it softens slightly. Season with salt, then serve the courgetti topped with the turkey bolognese, grated pecorino or parmesan, and basil leaves.
