These golden, crispy courgette balls are a delightful vegetarian option. Grated courgette is combined with halloumi, fresh herbs, and breadcrumbs, then shaped and fried until perfectly crisp. Courgette Balls

Ingredients

  • 8 medium courgettes
  • 1 white onion, finely diced
  • 4 garlic cloves, finely chopped
  • 100 g halloumi cheese
  • 1 cup breadcrumbs
  • 1 beaten egg
  • 2 tablespoons chopped mint
  • 2 tablespoons chopped parsley
  • 1 tablespoon chopped thyme
  • 1 lemon, zest of, grated finely
  • 3 tablespoons salt
  • pepper
  • 4 tablespoons plain flour
  • 4 tablespoons vegetable oil

Method

  1. Grate the courgettes into a colander, sprinkle with the salt and allow them to sit for 30 minutes.
  2. Transfer the salted courgette to a clean tea towel and squeeze firmly to remove all excess liquid.
  3. Combine the squeezed courgette with the onion, garlic, halloumi, breadcrumbs, egg, mint, parsley, thyme, lemon zest and pepper.
  4. Should the mixture seem too wet, incorporate a few extra breadcrumbs or a little flour.
  5. Form the mixture into small balls, then coat each one lightly in the plain flour.
  6. Place the floured balls on a plate and refrigerate them for 30 minutes.
  7. Heat the vegetable oil in a pan and shallow fry the balls until they are golden and crispy all over.
  8. Enjoy the courgette balls straight away while hot and crisp.
