Country Fried Steak and Milk Gravy
This classic American dinner features tenderised cube steaks, coated and fried in lard until beautifully crisp. The steaks are then served with a rich, peppery milk gravy made in the same pan, capturing all the delicious flavour from the cooking process. It's a comforting and satisfying meal that comes together quickly, perfect for a weeknight supper. The entire dish requires only a handful of staple ingredients and can be on your table in about half an hour.
Ingredients
- 4 (4 ounce) cube steaks
- 0.5 teaspoon salt, divided
- 1.75 teaspoons ground black pepper, divided
- 1 cup all-purpose flour
- 2 eggs, lightly beaten
- 0.25 cup lard
- 1 cup milk
Method
- Collect all the required ingredients.
- Sprinkle the cube steaks with 1/4 teaspoon of salt and 1/4 teaspoon of pepper, then set them aside.
- Mix the flour with 1 teaspoon of pepper on a plate. Put the beaten eggs in a separate bowl. Coat the seasoned steaks in the flour mixture. Next, dip them into the eggs, then coat them once more in the flour.
- Melt the lard in a large, heavy skillet. Cook the steaks in the hot fat for 3 to 4 minutes on each side, until they are golden brown. Transfer them to a plate lined with paper towels to drain.
- Remove all but 2 tablespoons of fat from the skillet. Stir 2 tablespoons of the seasoned flour into the remaining fat. Cook this mixture for 1 minute, stirring constantly and scraping the bottom of the pan.
- Slowly pour in the milk while whisking. Continue to cook and whisk often until the gravy thickens and bubbles, which will take 3 to 4 minutes.
- Add the last 1/4 teaspoon of salt and 1/2 teaspoon of pepper to the gravy. it should have a distinctly peppery taste. Serve the gravy with the fried steaks.
