Country Baked Chicken
This Southern-style baked chicken yields a wonderfully crispy and seasoned crust. The method involves a brief brine in salted water before the chicken is coated with melted butter and a dusting of seasoned flour. It is then baked with water in the pan, creating a moist environment that helps crisp the coating. The result is a simple yet flavourful dish perfect for a family meal. The total preparation and cooking time is approximately 55 minutes, serving four to five people.
Ingredients
- 3 lbs chicken parts (your favorite ones)
- 2 teaspoons salt
- 3 tablespoons butter, melted (to make it healthier, I'm also going to try it with canola oil)
- 2 tablespoons self-rising flour
- 1/2-3/4 teaspoon ground black pepper, to taste
- 1 cup water
Method
- Put the chicken pieces into a large bowl and cover them completely with water.
- Stir the 2 tsp salt into the water until dissolved.
- Allow the chicken to soak in this brine for 20 minutes.
- Heat your oven to 375.
- Drain the chicken thoroughly, discarding the brine.
- Pour the melted butter over the drained chicken and toss to ensure an even coating.
- Transfer the chicken to a 9 X 13 baking dish, arranging the pieces snugly together.
- Drizzle any leftover butter from the bowl over the chicken in the pan.
- Combine the self-rising flour and black pepper in a separate small bowl.
- Sift this flour and pepper blend evenly over the top of all the chicken pieces.
- Carefully pour 1 cup of water around the edge of the pan so it pools at the bottom without washing off the flour coating.
- Bake the chicken in the preheated oven for about 45 minutes.
- The exact cooking time will vary depending on the cuts of chicken used.
- Chicken breasts generally require less time in the oven than thighs do.
- For accuracy, use a meat thermometer to check the internal temperature reaches about 175.
- Should you see any patches of raw flour, simply baste them with pan juices and return to the oven for a couple of minutes to finish crisping.
