This Southern-style baked chicken yields a wonderfully crispy and seasoned crust. The method involves a brief brine in salted water before the chicken is coated with melted butter and a dusting of seasoned flour. Country Baked Chicken

Ingredients

  • 3 lbs chicken parts (your favorite ones)
  • 2 teaspoons salt
  • 3 tablespoons butter, melted (to make it healthier, I'm also going to try it with canola oil)
  • 2 tablespoons self-rising flour
  • 1/2-3/4 teaspoon ground black pepper, to taste
  • 1 cup water

Method

  1. Put the chicken pieces into a large bowl and cover them completely with water.
  2. Stir the 2 tsp salt into the water until dissolved.
  3. Allow the chicken to soak in this brine for 20 minutes.
  4. Heat your oven to 375.
  5. Drain the chicken thoroughly, discarding the brine.
  6. Pour the melted butter over the drained chicken and toss to ensure an even coating.
  7. Transfer the chicken to a 9 X 13 baking dish, arranging the pieces snugly together.
  8. Drizzle any leftover butter from the bowl over the chicken in the pan.
  9. Combine the self-rising flour and black pepper in a separate small bowl.
  10. Sift this flour and pepper blend evenly over the top of all the chicken pieces.
  11. Carefully pour 1 cup of water around the edge of the pan so it pools at the bottom without washing off the flour coating.
  12. Bake the chicken in the preheated oven for about 45 minutes.
  13. The exact cooking time will vary depending on the cuts of chicken used.
  14. Chicken breasts generally require less time in the oven than thighs do.
  15. For accuracy, use a meat thermometer to check the internal temperature reaches about 175.
  16. Should you see any patches of raw flour, simply baste them with pan juices and return to the oven for a couple of minutes to finish crisping.
