Ingredients

  • 1 (12 fluid ounce) can evaporated milk
  • 2 large egg yolks, beaten
  • 1 (14 ounce) can cream of coconut
  • 1 (14 ounce) can sweetened condensed milk
  • 0.5 cup white rum
  • 0.5 cup water
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground cloves

Method

  1. Place the evaporated milk and beaten egg yolks in the top part of a double boiler set over simmering water. Cook while stirring constantly until the mixture thickens enough to coat the back of a spoon and its temperature reaches 160 degrees F (71 degrees C).
  2. Move the cooked mixture to a blender. Pour in the cream of coconut, sweetened condensed milk, white rum, water, vanilla extract, ground cinnamon, and ground cloves. Blend the ingredients thoroughly for about 30 seconds until they are fully combined.
  3. Transfer the blended coquito into a sterilised glass bottle. Place it in the refrigerator to chill. To serve, pour it into glasses, adding ice if you prefer.
