Cold Sesame Noodles
This dish features udon or soba noodles tossed in a rich, nutty dressing made from tahini, garlic, ginger, and tamari. The sauce is brightened with a hint of maple syrup and vinegar, then used to coat the cooled noodles and crisp snow peas. Finished with a sprinkle of sesame seeds, scallions, and fresh coriander, it's a refreshing and satisfying meal prepared in only 14 minutes.
Ingredients
- 1 lb udon noodles or 1 lb soba noodles (or whatever long pasta you'd like)
- 3 tablespoons tahini (can substitute peanut butter)
- 2 -3 cloves minced garlic
- 2 teaspoons minced ginger
- 2 tablespoons tamari or 2 tablespoons soy sauce
- 1/2 teaspoon chili powder
- 1 tablespoon maple syrup
- 1/2 teaspoon cider vinegar or 1/2 teaspoon rice vinegar (really perks up the flavour) (optional)
- 1 -2 tablespoon sesame seeds (or more if you like)
- 1 -2 tablespoon sesame oil
- 3 chopped scallions
- 1/4 lb snow peas
- 2 tablespoons chopped coriander (optional)
Method
- Prepare the noodles according to package directions.
- Drain the cooked noodles and allow them to cool down.
- Combine the tahini, minced garlic, ginger, tamari, chili powder, maple syrup, and optional vinegar in a bowl.
- Sample the sauce and modify the flavours to your preference.
- If the mixture seems overly dense, stir in a little water to loosen it.
- Place the cooled noodles and raw snow peas into the bowl and mix thoroughly to coat everything in the sauce.
- Garnish the finished dish with the chopped scallions and optional coriander.
