Classic smoked salmon crostini
These elegant French canapés are perfect for a wedding or special celebration. Crisp, golden crostini are topped with a creamy blend of cheese, spring onions, and capers, then finished with a delicate strip of smoked salmon. Ingredients
- 2 x 200g packs smoked salmon
- 4 spring onions chopped
- 2-3 tbsp of capers drained
- 200g pot cream cheese
- 3 lemons cut into thin wedges, to serve
- 4 thin baguettes
- splash of olive oil
Method
- Slice the smoked salmon into thin strips. Combine the cream cheese with the chopped spring onions and drained capers. This mixture can be kept refrigerated for up to 2 days. Spread the cheese blend onto each prepared crostini base and finish with a strip of salmon. Offer lemon wedges alongside for serving.
- To prepare the crostini, slice each of the 4 thin baguettes into 20 pieces, each about ½cm thick, and discard the ends. Lightly drizzle the slices with olive oil and grill them. Cook for 2-3 mins until they begin to turn golden, then flip and cook for another 1-2 mins until crisp and golden all over. Work in batches if needed. The finished bases can be stored at room temperature in an airtight container for up to 3 days.
