Citrus Soba Noodles
These refreshing Japanese soba noodles are a simple, zesty dish ready in just 15 minutes. Tossed with spring onions, lime zest, juice and soy sauce, they make a vibrant side or a light main course. You can easily add your preferred vegetables or some chicken to create a more substantial meal. It's an ideal, speedy option for dinner or supper.
Ingredients
- 250g soba noodle (see know-how below)
- 4 spring onions shredded
- zest and juice 1 lime
- 1 tbsp soy sauce
Method
- Boil the soba noodles following the packet directions for approximately 7 mins. Once cooked, rinse them under cold running water until cool and drain thoroughly.
- Place the drained noodles in a bowl and combine them with the shredded spring onions, lime zest and juice, and the soy sauce.
