Citrus Iced Tea
This recipe creates a large batch of citrus-infused iced tea, blending the warm spice of cloves with the bright flavours of fresh orange and lemon. The method involves separately steeping cloves and tea bags before combining them with fruit juices and sugar. The final mixture is cooled and chilled, resulting in a refreshing beverage ideal for serving over ice. It yields enough for eight servings.
Ingredients
- 6 cloves
- 8 cups cold water
- 9 regular sized tea bags
- 1/2 cup fresh squeezed orange juice
- 1/2 cup fresh squeezed lemon juice
- 1 1/2 cups granulated sugar
Method
- Place the cloves and two cups of water into a small saucepan.
- Boil the mixture, then take it off the heat and allow the cloves to infuse for at least 45 minutes, or ideally 1 hour.
- In another small saucepan, gently boil two cups of the remaining water.
- Put the tea bags into the boiled water, cover the pan, and remove it from the heat source.
- Leave the tea to infuse for 5 to 10 minutes.
- Take out the tea bags, being careful not to squeeze them.
- Squeezing the bags can release tannins that create a bitter taste.
- Pour the clove water through a strainer into a two-quart container.
- Mix in the brewed tea, along with the orange juice, lemon juice, and granulated sugar.
- Stir the mixture well until all the sugar has completely dissolved.
- Pour in the last four cups of water and give everything a good stir to combine.
- Allow the tea to come to room temperature.
- Afterwards, refrigerate it until cold and serve in glasses filled with ice.
