These vibrant church window cookies are a classic American no-bake dessert, perfect for festive occasions. They combine melted chocolate and butter with colourful miniature marshmallows, then are shaped into logs, rolled in coconut and chilled until firm. The result is a sliceable treat that resembles stained glass, requiring no oven time. The recipe yields about 48 cookies and needs just over 2 hours of preparation and chilling time before slicing.
Ingredients
- 0.5 cup butter
- 2 cups semisweet chocolate chips
- 1 (10.5 ounce) package rainbow colored miniature marshmallows
- 1 (8 ounce) package flaked coconut

Method
- Collect the required ingredients.
- Put the butter into a 2 ½ quart glass or metal bowl. Set this bowl over a 3-quart saucepan containing gently boiling water, ensuring the bowl's base does not contact the water. Heat until the butter has fully melted.
- Mix in the chocolate chips, stirring until they melt completely, then take the bowl off the heat. Allow the mixture to cool for 10 minutes at room temperature, giving it an occasional stir.
- Introduce the marshmallows to the melted chocolate and fold them in gently until evenly coated.
- Lay out two sheets of parchment paper, each 15x18 inches, on your worktop. Divide the chocolate and marshmallow mixture in half, placing each portion in the centre of a paper sheet. Use a rubber spatula to form each into a log roughly 12 inches long.
- Enclose each log tightly in its parchment paper and move them to the refrigerator to chill for 30 minutes.
- Prepare two fresh 15x18-inch pieces of parchment paper, scattering 1 cup of flaked coconut over each one. Carefully move the chilled logs, which will remain quite soft, onto the new coconut-covered sheets.
- Roll each log in the coconut, pressing lightly so the exterior and sides are completely covered.
- Wrap the coconut-coated logs securely in the new parchment paper and return them to the fridge to firm up. Chill for a minimum of 4 hours, or you can leave them overnight.
- Once thoroughly chilled and firm, slice each log into pieces approximately 1/2-inch thick.
