Chunky Chicken and Ham Chowder
This American chowder is a comforting main course or lunch option. It combines roasted chicken breast and chopped ham with leeks, potatoes, sweetcorn and peas in a creamy, milk-based broth. The recipe is designed to be lower in fat and can be easily halved for smaller servings. It's a simple, one-pan meal that cooks in just 30 minutes, perfect for a quick yet satisfying dish.
Ingredients
- 1 tbsp sunflower oil
- 2 leeks thinly sliced
- 3 medium potatoes cut into small cubes
- 1 tbsp plain flour
- 700ml skimmed milk
- 2 ready roasted chicken breasts, skin removed and cut into chunks
- 2 thick slices ham chopped
- 175g each frozen sweetcorn and frozen peas
Method
- Warm the sunflower oil in a large saucepan. Cook the thinly sliced leeks for 3 mins until they have softened. Mix in the cubed potatoes and plain flour, then gradually pour in the skimmed milk while stirring with a wooden spoon. Allow the mixture to reach a boil, then let it simmer without a lid for 10-12 mins until the potato pieces are tender.
- Introduce the chunks of roasted chicken, chopped ham, frozen sweetcorn and frozen peas to the pan. Stir the chowder for 5 mins until everything is thoroughly heated and the liquid is bubbling. Add seasoning according to your preference and enjoy with some crusty bread.
