Christmas Red Cabbage
This traditional German side dish is ideal for a festive buffet. Red cabbage is slowly braised with port, red onion, orange and a cinnamon stick until beautifully tender and sticky. The recipe can be prepared up to two days in advance, allowing the flavours to develop fully. It serves eight people and requires about 85 minutes of total cooking time.
Ingredients
- 1 large red cabbage (about 1kg/2lb 4oz)
- 25g butter
- 2 red onions finely chopped
- finely grated zest and juice 1 orange
- 1 cinnamon stick
- 150ml port
- 1 tbsp red wine vinegar
Method
- Remove the outer leaves from the cabbage. Quarter it and cut out the core. Shred the cabbage finely using a sharp knife or a food processor with a slicing blade.
- Melt the butter in a large saucepan. Cook the chopped onions until soft, which should take about 5 mins. Stir in the orange zest and cinnamon stick, cooking for 1 min more. Add the shredded cabbage, then pour in the port, red wine vinegar, orange juice and 150ml water. Bring the mixture to a boil, then lower the heat, cover the pan and simmer for 45 mins-1 hr until the cabbage has softened.
