Christmas Meatbaubles
These festive turkey and cranberry meatballs are a wonderful addition to a Christmas buffet. They combine lean turkey mince with dried cranberries and orange zest for a seasonal flavour. A simple cranberry and orange dipping sauce is prepared while they bake. This recipe is designed to be slimming friendly and serves eight people, taking about 45 minutes from start to finish.
Ingredients
- 500 g 2% fat turkey mince
- 40 g dried cranberries, (finely chopped)
- 20 g panko breadcrumbs
- 1 tsp orange zest, (finely grated)
- 1/4 tsp garlic granules
- 1/4 tsp onion granules
- 1/4 tsp dried parsley
- salt and pepper, (to taste)
- low calorie cooking spray
- 155 g frozen cranberries
- 100 ml orange juice
- 100 ml cranberry juice
- 2 tbsp white granulated sweetener
- 2 tsp orange zest, (finely grated)
- 1 g fresh parsley, (stalks removed and roughly chopped, to garnish)
Method
- Heat your oven to 190ºC and lightly coat a baking tray with low calorie cooking spray.
- Place all the ingredients for the meatballs into a large bowl and combine them thoroughly.
- Divide the mixture to form 24 small meatballs, each roughly 3cm wide, and arrange them on the prepared tray. Bake for 25 minutes until they are completely cooked with no pink meat remaining.
- As the meatballs bake, put the frozen cranberries, orange zest, sweetener, orange juice and cranberry juice into a saucepan. Heat gently until it boils, then reduce the heat and let it simmer for 10 minutes until the sauce thickens.
- When the meatballs are ready, garnish them with chopped parsley and present them alongside the warm dipping sauce.
