Chorizo and Tomato Salad

Ingredients

  • 3 ripe beef tomatoes cut into wedges
  • 1/2 red onion thinly sliced
  • few thyme sprigs, leaves picked
  • 1 tbsp sherry vinegar
  • 2 tbsp extra-virgin olive oil
  • 100g chorizo sliced on the diagonal

Method

  1. Combine the tomato wedges, sliced red onion and picked thyme leaves in a bowl. Season this mixture, then add the sherry vinegar and extra-virgin olive oil. Allow these ingredients to sit and combine their flavours as you prepare the chorizo.
