Chorizo Queso Dip

Ingredients

  • 10 ounces bulk chorizo sausage
  • 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®), drained
  • 1 (8 ounce) package cream cheese, cubed
  • 1 (8 ounce) package processed cheese (such as Velveeta®), cubed

Method

  1. Place a large skillet on the heat. Cook the chorizo sausage, stirring it, until it is fully browned and broken into crumbles, which will take 5 to 7 minutes. Drain off any excess fat and move the cooked chorizo into your slow cooker.
  2. To the slow cooker, introduce the drained diced tomatoes with chiles, the cubed cream cheese, and the cubed processed cheese. Mix everything thoroughly. Put the lid on and set the cooker to Low. Allow it to cook until the cheeses have completely melted, giving it a stir now and then, for about 1 ½ to 2 hours.
