Chopped Herb and Pomegranate Salad
This fresh Turkish side dish combines a trio of chopped herbs with sweet pomegranate seeds and crisp vegetables. A simple dressing of lemon and pomegranate molasses brings all the flavours together. It is a quick, colourful salad that serves four and can be prepared in just 15 minutes.
Ingredients
- juice and zest 1 lemon
- 1 tbsp pomegranate molasses
- 1 tbsp olive oil
- 1 tsp sugar
- 2 Mediterranean cucumber (or 1 regular), deseeded and finely chopped
- 2 large tomatoes deseeded and finely chopped
- 110g tub pomegranate seeds (or seeds from 1 pomegranate)
- small bunch parsley chopped
- small bunch dill chopped
- small bunch mint all chopped
Method
- Combine the lemon zest and juice, pomegranate molasses, olive oil, 1 tsp sugar and seasoning in a large bowl, whisking them together.
- Place the deseeded and finely chopped cucumbers and tomatoes into the bowl, along with the pomegranate seeds and the chopped parsley, dill and mint. Toss the salad to coat everything in the dressing before serving.
