Ingredients

  • 1.25 cups milk
  • 2 large eggs, at room temperature
  • 0.5 teaspoon vanilla
  • 2 tablespoons melted butter
  • 1.25 cups all-purpose flour
  • 0.25 cup unsweetened cocoa powder
  • 3 tablespoons white sugar
  • 0.25 teaspoon salt
  • 0.5 cup semisweet chocolate chips

Method

  1. In a bowl, combine the milk, eggs and vanilla by whisking them together. Add the melted butter and stir it in.
  2. Take a separate bowl and whisk together the flour, cocoa powder, sugar and salt. Pour the wet mixture into these dry ingredients and mix just until combined. Fold in the chocolate chips.
  3. Apply cooking spray to a large skillet and place it over medium-high heat. For each pancake, pour 1/4 cup of batter into the heated skillet, working in batches. Cook for 2 to 3 minutes until bubbles form and burst in the centre. Flip each pancake and cook the other side for about 1 minute until golden brown.
