Chocolate Pancakes
These American-style chocolate pancakes offer a decadent breakfast treat. The batter combines cocoa powder and semisweet chocolate chips for a rich flavour. Ingredients
- 1.25 cups milk
- 2 large eggs, at room temperature
- 0.5 teaspoon vanilla
- 2 tablespoons melted butter
- 1.25 cups all-purpose flour
- 0.25 cup unsweetened cocoa powder
- 3 tablespoons white sugar
- 0.25 teaspoon salt
- 0.5 cup semisweet chocolate chips

Method
- In a bowl, combine the milk, eggs and vanilla by whisking them together. Add the melted butter and stir it in.
- Take a separate bowl and whisk together the flour, cocoa powder, sugar and salt. Pour the wet mixture into these dry ingredients and mix just until combined. Fold in the chocolate chips.
- Apply cooking spray to a large skillet and place it over medium-high heat. For each pancake, pour 1/4 cup of batter into the heated skillet, working in batches. Cook for 2 to 3 minutes until bubbles form and burst in the centre. Flip each pancake and cook the other side for about 1 minute until golden brown.
