Chocolate Oatmeal Brownies

Ingredients

  • 1 cup butter, softened
  • 0.66666668653488 cup firmly packed brown sugar
  • 0.66666668653488 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground nutmeg
  • 2 cups quick-cooking rolled oats
  • 1.25 cups chocolate chips, divided

Method

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a bowl, use an electric mixer to beat the softened butter, brown sugar, white sugar, eggs and vanilla extract until the mixture is light and fluffy. Stir in the flour, baking powder, cinnamon, salt and nutmeg just until combined, then fold in the oats and 1 cup of the chocolate chips. Transfer this batter to a 9x12-inch baking pan and scatter the remaining 1/4 cup of chocolate chips over the top.
  3. Place the pan in the preheated oven and bake for about 40 minutes, until the top feels dry and the edges have begun to pull away from the sides of the pan.
