Chocolate Ganache with Sea Salt, Olive Oil and Toasts

Ingredients

  • 250ml double cream
  • 250g 70% dark chocolate
  • 1 loaf ciabatta finely sliced
  • extra virgin olive oil
  • sea salt flakes

Method

  1. Warm the 250ml double cream in a heavy-bottomed pan, ensuring it does not boil. Remove from the heat, add the 250g 70% dark chocolate and allow it to melt. Beat the mixture with a wooden spoon until completely smooth, then leave it to cool and set. It can be chilled, but remove from the fridge before serving.
  2. Slice the ciabatta loaf finely and toast each side. Serve the ganache in glasses in small scoops. Drizzle generously with extra virgin olive oil and sprinkle with sea salt flakes. Brush the toast with more olive oil and serve alongside the ganache.
