Chocolate Fudge from Lonavala
This recipe recreates the beloved chocolate fudge from the Indian hill station of Lonavala. It is a rich, sweet confection made by cooking condensed milk with cocoa powder, sugar, butter and chopped nuts until thickened. The mixture is then set in a dish, cooled and cut into squares. Perfect for gifting or enjoying as a homemade candy.
Ingredients
- 400 g sweetened condensed milk
- 100 g peanuts or 100 g cashews (or use a mixture of nuts)
- 1/2 cup unsweetened cocoa powder
- 50 g butter
- 3/4 cup sugar
Method
- Use butter to grease a shallow dish.
- Place the condensed milk into a heavy-based pan.
- Mix in the butter, sugar, cocoa powder and your chopped nuts.
- Cook while stirring constantly until the mixture pulls away from the pan's sides, which should take about 15 minutes.
- Take the pan off the heat and transfer the mixture to the buttered dish, spreading it evenly.
- Let it cool completely and set before slicing into 1 inch squares.
- Keep the fudge in an airtight container stored in the refrigerator.
