Chocolate Chip Banana Muffins
These moist muffins combine melted chocolate with ripe bananas and chocolate chips for a rich treat. The recipe uses a simple method of mixing wet and dry ingredients separately before combining. Ingredients
- 3 ounces unsweetened chocolate
- 6 tablespoons butter or 6 tablespoons margarine
- 2 cups flour
- 2 teaspoons baking soda
- 1 tablespoon white vinegar, plus
- 3 tablespoons milk
- 2 very ripe bananas
- 2/3 cup sugar (or more for a sweeter taste)
- 1 teaspoon vanilla
- 2 large eggs
- 1 cup semi-sweet chocolate chips
Method
- Preheat the oven to 350 degrees.
- Place paper liners into 12 muffin cups.
- Melt the butter and unsweetened chocolate together using a microwave or double boiler, then stir and allow to cool a little.
- Combine the white vinegar and 3 tablespoons milk, then leave this mixture to curdle.
- Sift the 2 cups flour with the 2 teaspoons baking soda and set this dry mix aside.
- In a large bowl, mash the 2 very ripe bananas, then beat in the 2/3 cup sugar. Add the 1 teaspoon vanilla, 2 large eggs, and the milk and vinegar mixture, beating everything well.
- Stir the cooled chocolate mixture into the banana batter, alternating additions with the sifted flour mixture, mixing with a wooden spoon until just combined. Fold in the 1 cup semi-sweet chocolate chips.
- Divide the batter evenly among the 12 prepared muffin cups.
- Bake for 25 minutes, or until a tester comes out clean.
- Let the muffins cool in the pan for 5 minutes before moving them to a wire rack to cool fully.
