Chipotle Glazed Shrimp

Ingredients

  • 2 tablespoons olive oil
  • 1 cup finely chopped onion
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 cup water
  • 1/4 cup apple cider vinegar
  • 2 chipotle chiles in adobo, finely chopped
  • 6 tablespoons ketchup
  • 3 tablespoons orange juice
  • 3 tablespoons brown sugar
  • 1 1/2 lbs medium shrimp, cleaned (about 41-50 count)
  • oil, for sauteing shrimp
  • Old Bay Seasoning (optional)

Method

  1. Heat the olive oil in a saucepan large enough for the shrimp and cook the onion until soft, about 5 minutes.
  2. Cook the garlic, cumin and oregano for 1 minute.
  3. Mix in the water, vinegar, chopped chiles, ketchup, orange juice and brown sugar.
  4. Let the mixture come to a boil, then reduce the heat and let it simmer for about 5 to 10 minutes until it thickens a little.
  5. Keep the sauce covered on a very low heat.
  6. Warm some oil in a large skillet.
  7. Place the shrimp in the skillet, add Old Bay seasoning if desired, and cook for only about 3 or 4 minutes until just done.
  8. Transfer the shrimp to the sauce, increase the heat to high and cook for about 1 minute, stirring lightly to coat the shrimp in the glaze.
  9. Serve the glazed shrimp over hot cooked rice.
