Chinese-style lemon marmalade chicken

This Chinese-inspired dish features chicken thighs roasted with a glossy glaze of lemon marmalade, fresh ginger, garlic and soy sauce. The chicken is basted during cooking for a sticky, golden finish, then finished with fresh lemon and spring onions. It is a quick recipe taking just 45 minutes to prepare and cook, ideal for a weeknight meal served with rice and stir-fried greens.

Chinese-style lemon marmalade chicken

Ingredients

  • 200g lemon marmalade
  • 2 garlic cloves crushed
  • small knob of ginger peeled and finely grated (about 1 tbsp)
  • 1 tbsp soy sauce
  • 1 tsp sunflower oil
  • juice and zest 1 lemon
  • 8 chicken thighs skin on and bone in
  • 2 spring onions sliced diagonally
  • rice and stir-fried Tenderstem broccoli, to serve

Method

  1. Preheat the oven to 200C/180C fan/gas 6. Combine the marmalade, crushed garlic, grated ginger, soy sauce, oil and half of the lemon juice. Place the chicken thighs on a foil-lined baking tray and coat them with half of this marmalade mixture. Roast for 15 mins.
  2. Spoon the cooking juices from the tray over the chicken, then add the rest of the marmalade mix. Return to the oven for 10 mins. Baste the chicken once more, then continue cooking for a further 10-15 mins until the chicken is golden and thoroughly cooked.
  3. Finish the dish by drizzling with the remaining lemon juice, then scatter over the lemon zest and sliced spring onions. Serve alongside rice and stir-fried Tenderstem broccoli.
