Chilli & Peanut Slaw
This fresh Vietnamese slaw combines coarsely grated carrot, shredded white cabbage and thinly sliced red onion. It is dressed with a lively mix of chopped red chilli, lime zest and juice, white wine vinegar, sunflower oil and a pinch of sugar. Finished with salted roasted peanuts and a generous handful of chopped coriander, it's a crunchy, flavourful side that comes together quickly.
Ingredients
- 1 large carrot coarsely grated
- 1/2 small white cabbage shredded
- 1 red onion thinly sliced
- generous handful coriander chopped
- 50g salted roasted peanut
- 1 tbsp white wine vinegar
- zest 1 lime plus 1 tbsp juice
- 3 tbsp sunflower oil
- 1 red chilli deseeded and finely chopped
- generous pinch sugar
Method
- Combine the white wine vinegar, lime zest, lime juice, sunflower oil, chopped red chilli, sugar and seasoning in a bowl or food container to make the dressing.
- Place the coarsely grated carrot, shredded cabbage, sliced red onion and chopped coriander on top of the dressing.
- Scatter the salted roasted peanuts over the salad ingredients.
- Toss everything together just before you are ready to serve.
