Chilli & Peanut Slaw

This fresh Vietnamese slaw combines coarsely grated carrot, shredded white cabbage and thinly sliced red onion. It is dressed with a lively mix of chopped red chilli, lime zest and juice, white wine vinegar, sunflower oil and a pinch of sugar. Finished with salted roasted peanuts and a generous handful of chopped coriander, it's a crunchy, flavourful side that comes together quickly.

Chilli & Peanut Slaw

Ingredients

  • 1 large carrot coarsely grated
  • 1/2 small white cabbage shredded
  • 1 red onion thinly sliced
  • generous handful coriander chopped
  • 50g salted roasted peanut
  • 1 tbsp white wine vinegar
  • zest 1 lime plus 1 tbsp juice
  • 3 tbsp sunflower oil
  • 1 red chilli deseeded and finely chopped
  • generous pinch sugar

Method

  1. Combine the white wine vinegar, lime zest, lime juice, sunflower oil, chopped red chilli, sugar and seasoning in a bowl or food container to make the dressing.
  2. Place the coarsely grated carrot, shredded cabbage, sliced red onion and chopped coriander on top of the dressing.
  3. Scatter the salted roasted peanuts over the salad ingredients.
  4. Toss everything together just before you are ready to serve.
