Chilli & Ginger Nuts
These spiced nuts are an ideal savoury snack for entertaining. Coated in a mixture of egg white, brown sugar, chilli flakes, cayenne, curry powder and ground ginger, they are roasted until crisp. The recipe yields enough for four people and takes just 20 minutes from start to finish, requiring minimal preparation for a flavourful result.
Ingredients
- 1 egg white
- 1/2 tsp chilli flakes
- 1/2 tsp medium curry powder (or gluten-free alternative)
- 1/2 tsp cayenne pepper
- 1/2 tsp ground ginger
- 5 tbsp soft brown sugar
- 350g mixed nuts
Method
- Set your oven to 200C/180C fan/gas 6. Lightly whisk the egg white until it is frothy. Mix in the soft brown sugar, chilli flakes, cayenne pepper, curry powder and ground ginger until combined. Stir the mixed nuts into this spiced mixture until they are fully coated.
- Spread the coated nuts onto a baking tray lined with parchment paper. Season with salt according to your preference. Place in the oven to roast for 10-15 mins, using a spoon to stir and separate the nuts after about half the cooking time. Allow them to cool fully before breaking into pieces to serve.
