Chicken with Crispy Parma Ham
This Italian dinner dish combines pan-fried chicken with the salty crunch of Parma ham. The chicken is flattened for quick cooking and served alongside tender new potatoes and runner beans, all tossed in a simple lemon and garlic dressing. It's a complete main course that comes together in just 30 minutes, ideal for a speedy yet impressive weeknight meal for four.
Ingredients
- 450g new potato halved if large
- 225g runner bean trimmed and sliced
- 4 skinless chicken breasts
- 1 tbsp olive oil
- 4 slices Parma ham
- 1 garlic clove crushed
- juice 1 lemon
Method
- Boil the new potatoes in salted water for 10-15 mins until tender, introducing the runner beans for the last 2 mins of cooking. While they cook, place each chicken breast between cling film sheets and flatten them with a rolling pin to roughly 1cm thickness, then season.
- Warm a large frying pan and cook the Parma ham slices for 2 mins until crisp. Transfer to kitchen paper. Pour the olive oil into the pan and fry two chicken breasts for 3 mins per side. Move to a plate to keep warm and repeat with the remaining two breasts.
- Take the pan off the heat and stir in the crushed garlic and lemon juice. Add the drained potatoes and beans to the pan, tossing to coat. Crumble the crisp Parma ham over the top. Serve by dividing the chicken and vegetable mixture between four plates.
