Chicken Parmesan - Low Fat
This recipe offers a healthier version of a classic Italian favourite, using boneless chicken breasts and low-fat cheeses. The chicken is marinated in Italian dressing, coated in seasoned breadcrumbs, and pan-fried until golden. It is then topped with tomato sauce and melted cheeses. The entire dish is prepared in one pan and takes about 30 minutes to complete, making it a convenient weeknight option. It pairs wonderfully with pasta for a comforting meal.
Ingredients
- 4 boneless skinless chicken breasts
- 2 tablespoons low-fat Italian salad dressing
- 1/2 cup breadcrumbs
- 1 teaspoon italian seasoning mix
- 1 cup thick spaghetti sauce or 1 cup tomato sauce
- 1/4 cup grated parmesan cheese
- 1/2 cup grated low fat mozzarella
Method
- Trim any visible fat from the chicken breasts, then wash and pat them dry with paper towels.
- Place each chicken breast between sheets of waxed paper and gently flatten them using your fist or a meat mallet.
- Coat the chicken all over with the low-fat Italian dressing and allow it to marinate while you prepare the other components.
- Mix the breadcrumbs and Italian seasoning together on a sheet of wax paper.
- Lightly coat a large non-stick frying pan with cooking spray and place it on the hob to heat.
- Once the pan is hot, press the marinated chicken into the breadcrumb mixture and cook for 5- 8 minutes on each side until golden brown.
- Top each chicken breast with spaghetti sauce, a sprinkle of Parmesan, and the grated mozzarella. Cover the pan and cook for another 3-5 minutes until the sauce is hot and the cheese has melted.
