Chicken Parmesan - Low Fat

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoons low-fat Italian salad dressing
  • 1/2 cup breadcrumbs
  • 1 teaspoon italian seasoning mix
  • 1 cup thick spaghetti sauce or 1 cup tomato sauce
  • 1/4 cup grated parmesan cheese
  • 1/2 cup grated low fat mozzarella

Method

  1. Trim any visible fat from the chicken breasts, then wash and pat them dry with paper towels.
  2. Place each chicken breast between sheets of waxed paper and gently flatten them using your fist or a meat mallet.
  3. Coat the chicken all over with the low-fat Italian dressing and allow it to marinate while you prepare the other components.
  4. Mix the breadcrumbs and Italian seasoning together on a sheet of wax paper.
  5. Lightly coat a large non-stick frying pan with cooking spray and place it on the hob to heat.
  6. Once the pan is hot, press the marinated chicken into the breadcrumb mixture and cook for 5- 8 minutes on each side until golden brown.
