Chicken & Bacon Caesar Salad
This American-style salad combines ready-to-eat Caesar leaves with cooked chicken, crispy bacon, and creamy avocado for a satisfying meal. It comes together in only 20 minutes, making it ideal for a quick lunch, dinner, or supper. The bacon fat is used to flavour the croûtons, adding a delicious savoury crunch. Ingredients
- 4 rindless streaky bacon rashers
- 225g bag ready-to-eat caesar salad (with croûtons, dressing)
- 1 ripe avocado
- 2 cooked chicken breasts any skin and bones removed
Method
- Cook the bacon rashers in a frying pan for 2-3 minutes on each side. Take them out, then add the croûtons to the pan with the bacon fat. Toss them for a minute or two to crisp up and absorb flavour.
- Place the salad leaves onto two plates. Cut the avocado in half, remove the stone, peel it, and chop into pieces. Scatter the avocado over the leaves. Tear the cooked chicken breasts into pieces and add them. Break the cooked bacon into chunks and place it over the chicken, then add the croûtons.
- Pour the Caesar dressing over the assembled salad. Complete the dish with a generous sprinkle of parmesan cheese and a grind of black pepper.
